Five Favorites Friday: Salads and Snow!

Well it’s Friday, and like usual, I’m running late.

I know, what’s new?

Thanks to rehearsal, an unexpected phone call, and dealing with some insurance drama (they are out to get you, I swear!), I ended up going to bed way to late last night. Pair that with the fact that I’m still adjusting to getting up early after 5 days off and you end up with a running late, slightly grumpy Stephanie.

But how can I really be that grumpy when it’s FRIDAY?

Let’s focus on the positive, shall we?

It’s time for another edition of Five Favorites Friday, where I talk about 5 totally and completely random things that I’m loving this week!

Favorite Weeknight Meals: Under 30 Minutes

I’ll be the first the admit that I’m HORRIBLE at meal prepping on the weekend. I always say that it’s going to happen, and it just never does. But on the positive side, that means that I’ve become the master of the quick and easy 30 minute meals. They make my life so much easier because I can throw everything together after I get home for the gym and have it on the table before 8pm.

I’m even going to start sharing some of my go-to recipes, so feel free to check out my first one from yesterday: Gnocchi with Tomato and Veggie Cream sauce.

Favorite New Class: BodyAttack

Despite the snow, my friend Jax convinced me to come out to a new-to-both-of-us BodyAttack class on Wednesday night. I had taken one BodyAttack class like 3 years ago, but honestly didn’t really know what to expect. And man did it kick my butt! There was so much jumping and lunging and squatting… and more jumping. My calves were on FIRE.

It definitely was a pretty awesome workout, and super high intensity cardio, which I liked. I’m not sure it replaces spin as my favorite cardio gym class, but I might have to give it a few more tries before I make that judgment completely!

Favorite Recent Lunch: Salads

Normally I eat salads all summer, and then eat soup all winter. It’s a temperature thing, I guess, I don’t know. But after seeing some other bloggers eating salads on their WIAW posts, it kind of made me crave a jumbo bowl of veggies! So on my last grocery trip I picked up some of the fixings, and I’ve been throwing together salads all week! I love it!

Today’s combo was veggies, buffalo shredded chicken, and a little bit of ranch dressing. I love hot meat (<—blech, why does that sound so dirty?) on my salads. I think I’m a temperature person like some people are texture people. haha.

Favorite Way to Get Out of Work: Snow Day!

SOMEONE has been enjoying snow days! (This is actually a total archive picture from a snow day last year. Sadly I didn’t take any this time around because it all came at night!) Thanks to the snow I had a lovely 5 day weekend. I could definitely get used to those!! I got in several workouts at home and at the gym, I worked on some blog stuff, I cooked, I cleaned, I cleared out my DVR. And most importantly I stayed in my PJs almost the entire day. It was perfect.

Favorite New Way to Try Restaurants: Restaurant Week!

I know I talked about this in my weekend recap, but it’s Restaurant Week here in Fredericksburg, which means that we’ve been busy trying out all the restaurants that we’re too cheap to go to when they are full price (truth.) Thanks to the fixed prices, Restaurant Week is a great chance for us locals to check out a bunch of new restaurants, and Chris and I have definitely been taking advantage of that!

Monday we went out to a European Restaurant for lunch, where I got the trout in a lemon butter sauce, over ratatouille. Thanks to the movie, there is nothing that says “French” to me like rataouille (and this is coming from the girl with the French degree. My poor French professors are probably tres triste – very sad). It was delicious and definitely way better at $10.14 than at $15.00 or whatever it normally is!

      I’m the same way, because I have a bad habit of putting the same old things in my salads. Stay tuned this week for some more salad ideas, because I’ve totally changed it up this week and I’m LOVING it!

    Your salad sounds awesome! I like warm meat (that is awkward) on salads, too – salsa chicken is always my favorite. Though I’m just as happy to eat it cold :)

    Glad you gave BodyAttack a try… it is so intense! I like it and BodyCombat but rarely get to go. Hooray for snow days!

    Hi Jax! :) I tried BodyAttack during my gym’s Les Mills release this month. I liked it! I may work that in to my workout routine when I’m not training for a race as some intense cardio.

      (She says Hi back! haha) I definitely liked it, and think I might have to add it in every once and awhile when I’m needing a different form of cardio. But booy did it kill my poor calf muscles!

    I go in spurts where I eat the same things over and over for weeks! Right now I am on a pancake and oatmeal phase. Not just for breakfast though! That has been my lunch a lot lately. Also quest bars with lunch :)
