Sorry that this post is going up SUPER late today. We’ve had a bit of an insane day, that began with a ride in an ambulance…

Guys, I have a new breakfast, and I’m OBSESSED! I’ll be honest and say I’ve always been the lazy person who makes their oats in the microwave (2 minutes and you’re done!). But I made oats on the stove this weekend, and I just CANNOT STOP! This combo had bananas, vanilla stevia, cinnamon and was topped with maple syrup. SO GOOD!
Also, no tea today! I’m trying to cut down a little bit on my caffeine, starting with my morning tea!
For the first time in a LONG time, I didn’t bring my lunch to work. We were running REALLY low on food and I didn’t have time Monday night to make anything with my CSA stuff. So take-out it was! I ended up getting Bibimbap from a local Korean restaurant, which is basically a ton of veggies (lettuce, bean sprouts, zucchini, carrots… maybe more?) over rice, topped with a fried egg and spicy sauce! It normally has bulgogi (a marinated beef) on top, but since I don’t eat beef, I opted for just the egg. I could only make it through half before I was stuffed!
Post-workout, I had my usual Chobani. This is pretty much an afternoon staple at this point.
A few hours later, when I got home, I also ended up eating a half of a cheese quesadilla to hold me over because I knew it was going to be a LATE dinner.
Thanks to some business I had to take care of for our foster dog, I ended up not getting home until after 8:30, and still had to start dinner! I wanted to throw something together as fast as possible, so I ended up making pork chops (marinated briefly in a balsamic sauce), green beans, and garlic mashed potatoes, made with some of my CSA potatoes! Quick and delicious!
I may or may not have had a bite or two of cookies and cream ice cream after dinner… no picture, so you’ll never know the truth!
I was so happy to be able to work out during my lunch break again! Things have been a little crazy lately and I haven’t been able to for the last few weeks. I ended up doing Day 2 of the Jamie Eason Livefit Trainer program – which was a leg day. My coworker just finished this plan and really liked it, and since I’m kind of a “plan” person, I figured I’d give it a try. I’ll be honest and admit that I’m following it a bit loosely though. The whole cutting out cardio for the first phase kind of freaks me out, so I’m not doing that. Haha, I do what I want!
