I don’t know why, but this week has just FLOWN by so far! I can hardly believe that it’s already Wednesday! Not that I’m complaining. I’ll take a fast week over a slow week any time.
What is even crazier to me is that we’re already like 1/3 of the way through October! How did that even happen?? I swear, these last few months have gone by so fast! Is it just me?
Christmas will be here before we know it! Ahh!!
Last night ended up being a pretty chill night around the Freckled household. After a workout during lunch and some seriously sore glutes, I decided to forgo my usual evening workout in favor of a nice bubble bath. Sometimes you need a little pampering! Totally worth it!
But anyway, let’s get to all of the fun stuff, right? You all know it’s Wednesday, and I’m pretty sure by now you know what that means around here.
That’s right, it’s time for a What I Ate Wednesday!

I actually was in such a rush this morning that I had to throw my breakfast in a glass container and didn’t get a chance to eat it until I got to work (when it had flipped over at least twice in my bag and looked like an ugly purple mess), so I thought I’d show you a pretty picture from of a few weeks ago. Same combo though – oats with frozen mixed berries, a scoop of natural PB and cinnamon. Paired with a cup of tea, like always!
I caved around 11am (thanks to the peer pressure of some coworkers – such bad influences!) and ended up getting coffee. Skinny PSL, from our local coffee guy, of course! He also had these fresh made pumpkin cookies that he was debuting and wanted us to be guinea pigs. I have to say, they were AMAZING. And I promise, not as gigantic as the pictures makes it look!
Thanks to my late snack, I ended up not being hungry for lunch until later as well (compared to my normal noon-on-the-dot stomach growls. My coworkers joke that you could set a clock to my lunch time). When I finally did dig in, it was a semi-gross-looking-yes-delicious leftover jagerschnitzel and an apple.
Again, thanks to the late lunch, I wasn’t really hungry after the gym and skipped my normal snack. But by the time I got home a few hours later, I needed something to tide me over until dinner. So a grabbed a piece of toasted WW potato bread topped with farmers market boysenberry jam (AMAZING btw). Totally hit the spot.
Dinner was a new creation that I came up with to use up a spaghetti squash that has been hanging around my fridge since last week. I call it the spinach alfredo spaghetti squash bake. Or something like that. Recipe coming at you soon, because this one was definitely a winner! I paired it with some green beans as well, but apparently I forgot to capture them on camera! Paired with a glass of wine, because we FANCYYYYY like that. Clearly not.
I was back at the gym during my lunch break today (HOORAY!), and did kind of a random circuit. I’ll be honest and say I wasn’t super inspired. My brain just was all over the place, and my glutes were KILLING me after last night’s leg-heavy workout. But I still made it through 15 minutes of elliptical intervals, followed by a full body circuit.
